Slowly add the oil in a constant stream while the blender is on. Stop to scrape down the sides with a spatula. Add the cheese and pulse again until blended. Season with a pinch of sea salt and freshly ground pepper to taste. Optional: Add 2 garlic cloves with pine nuts. Hint: Serve with pasta, baked potatoes, or spread over toasted baguette slices topped with fresh slices of tomato.
